fresh - Chicken AuGratin Saute
6 chicken breasts, skins removed
1/2 bottle Italian dressing
Olive oil
1 cup sliced mushrooms
1/2 cup minced onion
1/2 cup sherry wine
1/2 cup grated Swiss or Gruyere cheese
Marinate chicken in dressing for 10 minutes.
Remove chicken from marinade but reserve marinade for sauce.
Heat some oil in a skillet and brown chicken on both sides.
Remove chicken and saute mushrooms and onions.
Add sherry and reserved dressing.
Replace chicken and spoon sauce over chicken.
Cover and simmer on low heat for 15 minutes or until liquid has nearly absorbed.
Spinkle with cheese and replace cover until cheese melts.
(If desired, place under broiler to brown cheese.)
Serve over cooked rice or noodles.
Makes 6 servings.
