2 skinless boneless chicken breasts
1/2 cup bread crumbs
1/4 pound Mozzarella cheese
2 Tablepsoons parsley
2 Tablespoons Olive oil
2 minced garlic cloves
4 Tablespoons white wine
juice of one lemon
wooden toothpicks
Cut each chicken breast into 4 pieces. Place between
waxed paper and pound with mallet until 1/4 inch thick.
Mix bread crumbs, Mozzarella and parsley together.
Place in center of each piece. Roll and secure with
toothpicks.
In frying pan over medium heat, saute chicken rolls in
oil and garlic for a few minutes until golden brown.
Add wine, reduce heat, cover and cook 5 minutes.
Sprinkle with lemon juice.
