fresh - Chicken Croquettes
2 eggs
1 pound ground cooked + drained chicken,
..or turkey or beef or pork
2 c. mashed potatoes (made with milk and butter), cold
1 med. onion, chopped
1/2 tsp. salt
1/4 tsp. ground black pepper
1 c. bread + saltine cracker crumbs
extra light Olive oil -- for frying
In a large bowl, beat 1 egg.
Add the meat, potatoes, onion, salt, and pepper; mix well.
Shape into 12 balls.
Beat remaining egg; dip balls into egg, then roll in the
crumbs, shaping each ball into a cone.
In a Dutch oven or deep-fat fryer, heat 2 inches of oil
to 375.
Fry croquettes, 4 at a time, for 2 minutes or until golden
brown, turning occasionally.
Drain on paper towels.
Makes 12. (2 per serving).
