    fresh - Chicken w/Lemon + Herb Pasta

    1, 12 ounce box bow tie pasta
    1/4 cup extra virgin Olive oil
    2 pounds boneless, skinless chicken breast,
    .....cut into cubes
    salt and ground black pepper to taste
    2 Tablespoons dried parsley
    1 Tablespoon dried basil
    1 Tablespoon minced garlic
    1 1/2 teaspoons dried lemon zest,
    ...(or grate fresh from lemons)
    2 Tablespoons lemon juice,
    ...(or squeese from fresh lemons)
    1/2 cup grated Parmesan cheese

    Cook pasta al dente to package directions. Drain
    and set aside.
    Pour oil in a large skillet and heat over medium heat.
    Add chicken, and salt and pepper to taste.
    Saute 3-4 minutes or until cooked through and tender.
    Do not overcook. Remove from heat.
    Stir in parsley, basil, garlic, lemon zest and juice.
    Add hot pasta to sauce and mix well.
    Adjust seasonings if desired.
    Sprinkle with cheese and toss.
    Makes 4 to 6 servings.
