fresh - Chicken w/Pineapple + Brown Rice
1 cup brown rice, may use white if prefer
1, 14 ounce can chicken broth
1, 8 ounce can pineapple tidbits, undrained
1 chopped sweet green bell pepper
1 finely chopped carrot
1/2 teaspoon ground ginger
4 boneless, skinless chicken breasts
2 Tablespoons teriyaki sauce
Coat a 13x9x2 inch baking dish with cooking spray.
Mix all the ingredients together except the chicken
and the teriyaki sauce.
Pour into the baking dish.
Place chicken on top and baste with the teriyaki sauce.
Cover with foil and bake at 375 for 45 minutes or
until the chicken is completely cooked and tender.
Makes 4 servings.
