fresh - Creamed Chicken
1/4 cup Canola oil
1/4 cup onion, chopped very fine, optional
1/4 cup flour
2 cups low fat chicken broth
3/4 cup low fat milk
2 chicken boullion cubes
1 teaspoon dried parsley
3 cups diced fresh chicken, more if desired
salt and pepper to taste
Saute onion in oil. Add flour and stir.
Add broth, milk, boullion cubes and seasonings;
stirring to a smooth gravy. Add chicken and parsley.
If gravy is not thick enough, mix a little flour and
milk together and add to gravy. Stir.
Good served over toast or biscuits.
