    We love the 'spicy' factor of this recipe.

    fresh - PinaColada Chicken w/rice, spicy

    4 chicken boneless breast halves
    1 can coconut milk
    1 small can pineapple tidbits
    1/2 to 1 teaspoon red pepper flakes (to taste)
    1 Tablespoon brown sugar
    1/2 teaspoon salt
    1/4 teaspoon black pepper
    1 teaspoon cornstarch
    2 Tablespoons minced green onion (optional)
    4 servings of cooked rice

    Coat a covered saute pan with cooking spray.
    Quickly brown the chicken breasts on both sides.
    Meanwhile, shake up the can of coconut milk and
    measure 2 tablespoons into a small bowl and add
    the cornstarch and mix well.
    When chicken is browned add the coconut milk,
    pineapple, red pepper, brown sugar and salt and
    pepper. Stir together and bring to a low simmer.
    Cook over medium low heat for 15 minutes.
    Stir in the cornstarch mixture and cook until
    thickened.
    Serve over the rice and top with the minced green
    onion if desired.
