fresh/stuffed - Chicken Breasts w/Crab Stuffing
8 chicken breast halves, skinned and deboned
salt + pepper
1 c. pkgd. herb stuffing mix
1 egg, beaten
1 can cream of celery soup
1/4 c. chopped green pepper
1 tbsp. lemon juice
2 tsp. worcestershire sauce
1 tsp. prepared yellow mustard
1/2 tsp. salt
1 6oz. can crabmeat, picked thru
1/4 c. salad oil
1/2 tsp. onion powder
Preheat oven to 350. Greased 12x9x2 inch baking dish.
Flatten chicken breasts, sprinkle with salt and pepper.
Mix herb stuffing with egg, half of soup, green pepper,
lemon juice, worcestershire sauce, mustard, salt, and
crabmeat. Spoon some of the mixture onto each chicken
breast, roll, secure with toothpicks.
Saute breasts in butter and arrange in dish. Cover and
bake for 15 minutes.
Combine remaining half can of soup with remaining ingredients.
Pour over chicken. Cover and continue baking until tender,
about 15 minutes.
Serves 6 to 8.
