    fresh/stuffed - Chicken w/Roasted Red Peppers

    2 large boneless, skinless, chicken breasts
    1/2 of a 12 ounce jar of roasted red peppers
    1 cup seasoned breadcrumbs
    1 Tablespoon and 1 1/2 teaspoons vegetable oil
    1/2 cup sour cream
    1/4 cup Feta cheese

    With a very sharp knife, cut pockets into the thickest part of breast.
    Stuff as many pieces of roasted red peppers as possible into pockets.
    Pour breadcrumbs into a large plastic bag.
    Place stuffed chicken in bag, and shake to coat.
    In a large skillet, heat oil to a medium/high heat.
    Place chicken in the pan and cook for 5 minutes on one side then turn,
    and cook for 10 minutes on the other side.
    While the chicken is cooking, use a blender/food processor to blend
    sour cream, and a few pieces of red peppers togther.
    Flip the chicken breasts one more time, and cook another 5 minutes, or
    or until done.
    Cut the chicken breasts in 1/2 and place on a plate.
    Drizzle with sour cream mixture, and sprinkle with the cheese.
    Makes 4 servings.
