    leftover - Chicken Hash

    1/4 cup butter or margarine
    3 cups diced onions
    3 cups diced red and/or green bell peppers
    5 cups diced cooked chicken or turkey
    4 cups peeled, diced cooked potatoes
    1, 10 3/4 ounce can condensed cream of celery soup
    1/2 teaspoon salt
    1/4 teaspoon black pepper
    1 beaten egg
    1/3 cup grated Parmesan cheese

    Preheat oven to 400 degrees F. In a Dutch oven, melt the
    butter; add onions and saute until tender, about 5 minutes
    on medium-high heat. Add bell peppers, chicken, potatoes,
    soup, salt, and pepper. Cook, stirring occasionally, until
    mixture is heated through, about 10 minutes. Coat a 9x13x2
    inch baking dish with cooking spray. Spoon in chicken
    mixture. Brush egg over top of mixture, then sprinkle with
    Parmesan cheese. Bake for 10 to 15 minutes or until golden.
    Makes 8 servings.
