Brownie's Diner's - Coconut Meringue Pie

This was a long time favoriate diner in Dallas, Tx.
They had one of the best coconut pies around. It
was a frequent stop of politicians including a
friend of mine who ran for Governor a few years
back. I contacted his staff and asked if J M would
like the recipe for the pie. After the election he
called me and asked for it.... it's a good one I got
from the chef who has since passed on.
Brownie's Diner's - Coconut Meringue Pie
for cream part of pie:
3 eggs, separated
2 cups (1 pint) whole milk
6 ounces granulated white sugar
1 teaspoon vanilla
6 Tablespoons butter
1 ounce cornstarch
coconut
a cooled, 9 inch pastry crust/shell that
...has been pre cooked
for meringue:
5 ounces granulated white sugar for meringue
for cream part of pie:
Combine egg yolks, milk, sugar, vanilla and butter.
Cook until about to boil and then add the cornstarch
dissolved in a little Cold water. Stir in and cook until
very thick.
Mix in coconut to taste and pour into crust.
When cooled, top with the merinque.
for merinque:
Use the 3 egg whites separated above and the sugar.
Beat until stiff making sure sugar is dissolved.
Spread on pie and then top with toasted coconut, if
deisired.
