Olive Garden's - Eggplant Parmigiana
2 Eggplants, peeled, slice 1/4 thick circles
Flour
Oil
Seasoned salt
1, 16 ounce jar meat-flavored Prego sauce
1/4 cup grape jelly
1, 14 ounce can sliced-style stewed tomatoes,
...break up with a fork
1/2 pound shredded Mozzarella cheese
1/4 cup grated Parmesan cheese
Moisten eggplant with some milk and coat lightly in flour.
Quickly brown slices in hot oil, dusting each side generously
with seasoned salt.
When fork tender and golden brown transfer to a 9x13x2 inch pan.
Combine Prego sauce, jelly and tomatoes. Heat on medium until hot,
but do not boil. Pour over eggplant slices.
Sprinkle tops of slices with Mozzarella and Parmesan cheeses.
Cover loosely with foil and bake at 375 F. about 20 to 25 minutes
or until tender.
