    Outback Steakhouse's - Lamb Sauce

    1/3 cup + 1 cup cabernet wine, separated
    ...(PLEASE, do not use anything else)
    2 1/2 tablespoons flour
    6 cups au jus sauce (kind of a clear beef broth)
    1 tablespoons dried parsley
    2 tablespoons lamb seasoning*, recipe below
    1 tbsp. garlic powder
    1/4 cup butter

    *lamb seasoning:
    black pepper
    minced fresh garlic
    kosher salt
    Olive oil
    rosemary, Or use mint instead

    Combine the lamb seasoning ingredients together. Set aside.
    Whisk the 1/3 cup of the wine with the flour in a bowl and set aside.
    Combine the remaining wine, broth, parsley, lamb seasoning and garlic powder in a sauce pan.
    Bring this wine mixture to a GENTLE boil.
    Simmer to reduce, for about 4 to 5 minutes.
    While reducing the liquid, brown the butter in another pan. Don't just melt the butter, BROWN it, but do NOT burn it.
    Stir the flour mixture into the wine mixture.
    When finished reducing the liquid, add the butter and mix well.
    The sauce should now have a semi thick look to it.
    When done, you should have approximately 7 cups.
