Spaghetti Work's - Beer Cheese Sauce
1/2 cup onion, chopped
1/2 cup celery, chopped
1/2 cup carrots, chopped
1 cup butter, (2 sticks)
1 cup flour
48 ounces chicken broth, heated
1/2 pound cheddar cheese in chunks
3 cups warm beer
parsley to garnish
Simmer vegetables in a small amount of water until tender.
Cool slightly and puree in a blender/food processor.
Melt butter in a large skillet.
Add flour, stirring constantly, making a golden brown roux.
Slowly add hot broth while stirring constantly.
Bring to a boil.
Add pureed vegetables and boil gently for 3 - 4 minutes.
Cool slightly and add cheese (cheese will be stringy, if
mixture is not hot.). Stir until melted.
Slowly add warm beer.
Bring mixture to just boiling.
Serve over cooked pasta.
