Chili's - Monterey Chicken
2 boneless skinless chicken breasts
salt and pepper to taste
4 tsp. barbecue sauce
4 slices of well crisped bacon
1/4 c. shredded Monterey Jack cheese
1/4 c. shredded sharp Cheddar cheese
1/2 c. chopped fresh tomatoes
dried chives
Pound the breasts until they are somewhat flattened.
Sprinkle with the salt and pepper.
Coat a non stick frying pan with cooking spray.
Cook the breasts until no longer pink in the middle. Then transfer to a baking pan.
Mix the cheeses together and set aside.
Top the chicken breasts with the barbecue sauce, bacon, and cheese.
Broil the breasts in the oven until the cheese is melted.
Place the breasts on a serving dish.
Sprinkle with chopped tomatoes and sprinkle with the chives.
Makes 2 servings.
