Cheesecake, Creamy Marshmallow w/fruit
crust:
1 cup vanilla wafer crumbs
1/4 cup butter. melted
Combine crumbs and butter.
Press into bottom of a 9 inch spring form pan.
4 cups mini marshmallows
1/3 cup milk
2, 8 ounce packages cream cheese
2 Tbsps. lemon juice
2 Tbsps. grated lemon rind
1 tsp. vanilla
1 cup heavy cream, whipped
Melt marshmallows with milk in heavy saucepan
over low heat. Stir until smooth.
Chill until slightly thickened.
Combine softened cream cheese, lemon juice,
rind and vanilla, mixing at medium speed with
electric mixer until well blended.
Beat in marshmallow mixture.
Fold in whipped cream.
Pour over crust.
Top with blueberry or cherry pie filling.
Chill at least one hour.
Serve.
