    Cheesecake, Rich Chocolate

    1 1/2 cups chocolate wafer crumbs
    1/4 teaspoon ground nutmeg
    1/2 cup melted butter
    2, 8 ounce packages softened cream cheese
    3/4 cup sugar
    3 eggs
    1, 8 ounce container Ricotta cheese
    6, 1 ounce squares melted semisweet chocolate
    1 tablespoon + 3/4 teaspoon cocoa
    1 1/2 teaspoons vanilla extract
    1/2 cup whipping cream, whipped
    more whipped cream, maraschino cherries, chocolate curls, nuts, optional

    Combine chocolate crumbs, butter and nutmeg, mixing well.
    Press mixture into the bottom of a 9 inch spring form pan. Chill for at
    least 1 hour.
    Beat cream cheese at low speed until light and fluffy, gradually adding
    sugar.
    Add eggs, one at a time, beating well after each addition.
    Stir in Ricotta, melted chocolate, cocoa and vanilla. Mix well.
    Gently fold in whipped cream, spoon into prepared pan.
    Bake at 300 degrees F for 1 hour.
    Turn off the oven and let cake remain inside with door closed for another 30
    minutes.
    Open door and allow the cake to cool INSIDE the oven for 30 more minutes.
    Remove to refrigerator for 8 hours.
    Remove the side of the spring form pan and garnish desired.
