Cheesecake - Mini's #3

6 vanilla wafers
8 ounces cream cheese, softened
1/4 cup sugar
1 1/2 teaspoons lemon juice
1/4 teaspoon vanilla
1 egg
pie filling, preserves or fresh fruit

Combine cream cheese, sugar, lemon juice and vanilla,
mixing at medium speed until blended. Blend in egg.
Place 1 vanilla wafer in each of 6 paper lined muffin
cups. Pour filling over wafers. Bake at 325 degrees for
25 minutes. Cool before removing from pan. Top as
desired and serve.
Makes 6 servings.
