Beef Crescent Bake
2 cans refrigerator crescent rolls
1 1/2 pounds lean ground beef (I use ground round)
One onion, diced
One bell pepper, diced (optional but we like it)
1 Tablespoon minced garlic (I use the kind in a jar)
Diced jalapeno, or jalapeno relish to taste (optional)
1, 6 ounce can tomato paste
1 1/4 cups hot water
1 envelope Sloppy Joe seasoning
2 cups shredded cheese (I prefer the 4 cheese Mexican blend)
Saute the ground beef with the onions, bell pepper, and garlic until the
meat is brown.
Add the tomato paste, jalapeno, water and seasoning mix.
Simmer, stirring occasionally, until most of the liquid is absorbed and
the mixture is thick.
In a 13x9x2 inch baking dish that has been sprayed with vegetable spray, put
one can of crescent rolls, pressing the seams together and spreading
them out to fill the bottom of the dish.
Spoon the beef mixture over the crescent rolls.
Top the beef with the shredded cheese.
Top with the remaining can of crescent rolls, again pressing the
seams together.
Bake at 350 degrees about 30-35 minutes until the crust is brown.
