    Beef + Swiss Crescent Pie

    1 pkg crescent rolls
    1 lb ground beef
    1 med onion
    1 1/2 tsp oregano
    1 green pepper, chopped
    1 tomato sliced or chopped *
    2 eggs
    1 c cottage cheese *
    1 tps salt
    1/4 c chopped green pepper
    3/4 c chopped cheddar cheese

    Heat to 375. Grease a 9 x 13 baking pan.
    Press crescent rolls into bottom of pan.
    Brown meat and onion. Drain.
    Add oregano and spread over crust.
    Beat eggs, cottage cheese, salt, and pepper.
    Spoon egg mixture over meat layer.
    Top with green pepper, tomato and cheese.
    Bake for 20 minutes.

    NOTES:
    In a pinch, I have fixed this without cottage cheese
    and tomato and it is still very good.
    I always chop the peppers very small and drain the
    tomatoes. I also stir the cottage cheese well and
    drain any extra liquid from it. I've never had it turn
    out soupy.
