scratch - Green Onion Crescent Rolls
1 tablespoon dry yeast
1/4 cup warm water
2 tablespoons honey
1 1/3 cups water
1/4 cup nonfat dry milk
1/2 teaspoon salt
2 tablespoons wheat germ
3 cups whole wheat flour -- (3 to 3 1/2)
2 tablespoons butter, melted
1/3 cup chopped green onions
4 teaspoons sesame seeds
Heat oven to 400 degrees F.
In a small bowl dissolve yeast in warm water. Add honey.
Set aside to proof. In a large bowl mix water, nonfat dry
milk, salt, and wheat germ. Add yeast mixture. gradually
add flour, mixing well. Knead on a floured surface until
dough is smooth and elastic, about 10 minutes. Place dough
in a greased bowl, turning to grease top. Cover with plastic
wrap and let rise until double in bulk, about 1 hour.
Lightly grease 2 baking sheets.
Punch down dough and divide in half.
Roll each half into a large circle.
Brush each circle with 2 teaspoons melted butter and
sprinkle with one half of the chopped scallions.
Divide each circle into 12 wedges.
Roll each wedge toward the center, shape into crescents,
and place seam side down on prepared sheets.
Brush tops with remaining butter and sprinkle with sesame
seeds.
Bake for 10 to 15 minutes.
Makes 2 dozen rolls.
