    crockpot - Beef Roast w/Veggies

    List of Ingredients

    crockpot - Beef Roast w/Veggies

    1 2-3 lb. chuck pot roast
    4 small quartered potatoes
    2 sliced carrots
    1 chopped onion
    2 sliced celery stalks
    2 sliced parsnips
    1 tsp. dried rosemary
    1/2 tsp. dried thyme
    1/2 tsp. salt
    1/4 tsp. pepper
    1/2 c. beef broth

    Mix vegetable together and then put in the bottom of a crockpot/slowcooker.
    Sprinkle with rosemary and thyme.
    Place the roast on top of the vegetables and sprinkle with the salt and pepper.
    Pour in beef broth and cook on low for about 8 hours.
    The Skinny: Use the leanest roast you can find and fat free beef broth.
    Makes 6 - 8 servings.
