    crockpot - Braciole

    2 1/2 pounds round steak, (1/4 - 1/2 inch thick),
    ...trimmed of all fat
    1/2 pounds loose, bulk Italian sausage
    1 Tablespoon dried parsley flakes
    1/2 teaspoon + 1 teaspoon + 1 teaspoon dried oregano
    2 minced + 5 chopped garlic cloves
    1 large finely chopped + 2 large chopped onions
    1 teaspon + 1 teaspoon + 2 teaspoons salt
    1, 16 ounce can Italian style tomatoes
    1, 6 ounce can tomato paste
    dash taco sauce
    2, 28 ounce cans tomatoes or 10 large tomatoes
    1 Tablespoon Worcestershire sauce
    2 Jalapeno peppers
    1 teaspoon chili powder
    1 teaspoon dried thyme
    1 Tablespoon white granulated sugar
    1 Tablespoon flour
    1 Tablespoon oil
    1 Tablespoon wine vinegar

    Cut the steak into 8 evenly shaped pieces.
    Pound the steak pieces between waxed paper until they
    are very thin and easy to roll.
    In a frying pan, lightly brown the sausage. Drain well.
    Add the parsley, 1/2 tsp. of the oregano, the minced
    garlic, the finely chopped onion, and salt and mix well.
    Spread each steak with 2 - 3 tbsp. of the sausage mixture.
    Roll up the steaks and tie together with cotton string.
    Stack the steak rolls in the crockpot/slow cooker.
    Combine the Italian style tomatoes, tomato paste, 1 tsp.
    of the salt, and 1 tsp. of the oregano together. Pour
    over the steak rolls.

    for the sauce:

    Place the regular tomatoes, the chopped garlic,
    Worcestershire sauce, the 2 tsp. salt, the chopped onions,
    Jalapeno pepper, chili powder, the other 1 tsp. oregano,
    hyme and sugar together and place in the crockpot and
    stir well.
    Cover, using low heat, and cook for 8 - 10 hours.
    Remove the cover and turn heat to high for the last hour
    to reduce excess moisture.
    Remove the steak rolls from the crockpot to a serving
    platter and keep warm.
    Stir in the flour, oil, and vinegar into the liquid in
    the crockpot. Allow to cool slightly. Then pour 3 cups
    of the sauce at a time into a blender/food processor
    and blend until smooth, if desired.
    Serve the steak rolls with the sauce.
    Makes 8 servings.
