    List of Ingredients

    crockpot - Chicken w/Cornbread Stuffing

    1/2 c. butter, (1 stick)
    1 c. chopped onions
    1 c. chopped celery
    6 slices stale bread, crumbled
    1 8x8x2"pan cornbread, crumbled
    1 sleeve white crackers, crumbled, (1/4 lb.)
    2 tsp. poultry seasoning
    salt and pepper to taste
    4 c. + 1 14oz. can chicken broth
    4 beaten eggs
    1/2 c. milk
    1/2 tsp. baking powder
    3 - 4 c. chunks of chicken

    You will need a 5 quart crockpot/slow cooker.
    Saute the onions and celery in the butter and pour over all the crumbs in a very large mixing bowl.
    Add poultry seasoning, salt and pepper and stir together.
    Pour enough broth into mixture just to moisten.
    Add the beaten eggs and mix together well.
    Add the baking powder, milk, and the remaining broth.
    The mixture should be very slushy. (Pouring).
    Add the chicken.
    Pack tightly into the crockpot.
    Cover and cook on high for 1 hour.
    Then cook on low for 4 - 8 hours.
