Crockpot - Minestrone Soup

List of Ingredients
1 c. diced beef or ham
1 16oz. can corn
1/2 c. minced onion
1 clove minced garlic
1/2 c. shredded carrots
1/2 c. diced celery
1 10oz. pkg. frozen chopped spinach, thawed and squeezed dry
1 16oz. can tomatoes, chopped
3/4 tsp. dried parsley
1 quart chicken broth
1/2 c. small shaped pasta
grated Parmesan cheeseRecipe
Keep the pasta and cheese set aside.
Then combine the rest of the ingredients in the crockpot/slow cooker.
If the chicken broth does not cover everything, then add water just to cover.
Cook on high for 1 hour.
Then cook on low for 6 - 8 hours, or on automatic for 5 - 6 hours.
Stir the pasta in 30 minutes before done.
Serve sprinkled generously with the cheese.
Makes 6 servings.
