Crockpot - Roast Chicken + Stuffing

List of Ingredients
1 16oz. pkg. stuffing mix from a box
1 1/4 c. water
1/4 c. apple juice or any dry white wine
12 carrots, cut in quarters
4 or 5 lb. roasting chicken
salt and pepper to tasteRecipe
Make the stuffing with the water to package directions.
Stir in the apple juice.
Place the carrots in the bottom of the crockpot/slow cooker.
Wash, and pat dry the chicken.
Place the stuffing inside and place on top of the carrots.
Sprinkle with the salt and pepper.
Cover and cook on low for 6 to 8 hours.
Makes 4 servings.
If you cannot fit all the stuffing into the chicken, place
any leftover in a foil square and seal. Lay on top of the
chicken in the crockpot before covering.
