    crockpot - Vegetable Casserole

    2 cups carrots, cut in strips, cooked and drained
    2 cups diced celery
    1 small diced onion
    1/4 cup diced sweet green pepper
    2 cups tomato juice, (1 pint)
    4 cups green beans, drained
    1 teaspoon salt
    dash of pepper
    3 tablespoons instant tapioca
    1 tablespoon ranulated white sugar

    Mix all ingredients together in crockpot/slow cooker,
    or in a baking dish that has a lid.

    for crockpot:
    Dot with 2 tablespoons butter and cook on low for
    8 - 10 hours, or on high for 4 - 5 hours.

    for oven:
    Dot with 4 Tablespoons butter bake at 325 degrees F.
    for 2 1/2 hours.
