crockpot - Ginger + Molasses Beef Stew
2 lbs cubed beef
2 beef boullion cubes
1 tbsp. oil
4 c. sliced carrots
2 med. sliced parsnips
1 med. sliced onion
1 stalk sliced celery
1/2 tsp. ground ginger
1/4 c. quick-cooking tapioca
14 1/2oz. can undrained diced tomatoes
1/4 c. vinegar
1/4 c. molasses
1 tsp. salt
1/2 tsp. ground black pepper
1/2 c. raisins
In a large skillet brown meat, a third at a time, in hot oil. Drain off fat.
In a large slow cooker, place carrots, parsnips, and celery.
Sprinkle tapioca over vegetables.
Drop in beef boullion cubes. Add meat.
In a bowl, combine undrained tomatoes, vinegar, molasses, salt, pepper,
and ground ginger; pour over meat.
Cover and cook on low for 9 to 10 hours or on high 4 to 5 hours.
Stir in raisins; cover and cook for 30 minutes more.
Serves 8.
