crockpot - Monterey Chicken + Potatoes
1 1/2 lb potatoes, cut into 1-1/2 inch pieces
1 1/2 tablespoons melted butter
4 boneless chicken breast halves, skinless
1 tablespoons lime juice
1/4 cup chopped fresh cilantro (optional)
3 tablespoons salsa
1 1/2 cup shredded cheese
Toss potatoes with butter and place in bottom of
crockpot/slow cooker.
Put chicken on top.
Combine juice, cilantro and salsa and pour over chicken.
Cover and cook on Low for 8 hours.
Half an hour before serving add shredded cheese.
