crockpot - Peppercini Beef, for sandwiches
3-4 pound roast (anything on sale)
5-8 cloves of garlic (to your liking)
1 envelope (packet) dry Italian dressing
1 cup beef broth
1 jar sliced Peppercini peppers, cut stems off
fresh mushrooms (optional)
onions slices
Provolone or mozzarella cheese
Hoagie rolls
Slice garlic cloves (I use minced in a jar) into thirds lengthwise.
Make slits in roast and insert garlic all over roast or sprinkle
over all.
Place roast into crockpot/slow cooker.
Mix Italian dressing and broth with peppercini (including liquid)
and pour all over roast.
Place onion slices on top of roast.
Add beef broth so there is enough liquid to cook meat.
Cook on low 8-10 hrs or until falling apart.
Shred beef with 2 forks.
When making sandwiches:
place meat in rolls
cover with cheese
zap in microwave for few seconds
use your choice of condiments
Don't forget to try some Peppercini in the sandwiches.
**For a spicier and hotter taste, add some sliced jalapenos,
an envelope of Onion Soup Mix and some sliced onions.
