crockpot - Potatoes w/Cream Cheese
2 minced garlic cloves
1 teaspoon salt
1/4 teaspoon ground black pepper
2 pounds peeled, sliced potatoes, (8 medium)
1, 8 ounce package cream cheese, cut into 1 inch cubes
4 finely chopped scallions
Use a small bowl to combine the scallions and garlic.
Use another small bowl to combine the salt and pepper.
Grease the inside of the crockpot/slow cooker.
-Layer 1/4th of the potatoes.
Sprinkle with 1/4th of the salt and pepper.
Top with 1/3rd of the cream cheese.
Then top with 1/3rd of the scallion mixture.
-Place a 2nd layer of 1/4th of the potatoes.
Sprinkle with 1/4th the salt and pepper.
Top with 1/2of the remaining cream cheese and 1/2 of
the remaining scallion mixture.
-Make a layer of 1/4th of the potatoes.
Sprinkle with 1/4th of the salt and pepper.
Top with the remaining cheese and scallion mixture.
-Make a final layer with the remaining potatoes.
Sprinkle with the remaining salt and pepper.
Cover and cook on high for 3 hours.
Uncover and stir to blend the melted cheese.
Cover and cook for about 1 hour longer.
Stir well to mash slightly and serve.
