    crockpot - Stuffed Peppers #2

    6 large (tall type) green bell peppers
    1 lb. extra lean ground beef
    1/2 c. uncooked whole grain rice
    1 large chopped onion
    1 large shredded carrot
    1 tsp. beef bouillon granules
    1/2 tsp. salt
    1/2 tsp. pepper
    1 tsp. + 1 tsp. garlic powder
    1 10 3/4oz. can condensed tomato soup
    1 16oz. can tomato puree or crushed tomatoes

    Cut the tops and a little slice from the bottom of the green peppers. Dice and set aside.
    Remove seeds and wash. Turn upside down and set aside to drain.
    Mix the ground beef, the diced green pepper, rice, onion, carrot, bouillon, salt, pepper,
    and the 1 tsp. of garlic powder together in a large mixing bowl.
    Stuff each pepper almost full.
    Place the peppers side by side in the crockpot/slow cooker.
    In a small mixing bowl, combine the tomato soup, puree/crushed tomatoes and the other 1 tsp. garlic powder.
    Pour over the stuffed peppers in the crockpot/slow cooker.
    Cover and cook on low for 6 - 8 hours.
    Makes 6 servings.
