2 very ripe avocados - peeled, seeded and chopped
2 very ripe pears, peeled, cored and chopped
2 tablespoons lime juice
2 tablespoons orange juice
2 tablespoons dark rum
1/2 cup macadamia nuts
1/8 teaspoon cardamom
1/8 teaspoon grated orange rind
4 fresh mint leaves for garnish
Place all ingredients into a blender or food processor. Puree for about
1 minute or until smooth. Pour into individual parfait glasses. Chill
for at least one hour. Garnish with fresh mint leaves. Serves 4.
