Dessert Burritos
3 c. Granny Smith apples, peeled and chopped
1/2 c. dried figs, chopped
1/4 c. sugar
1/4 c. light brown sugar
2 tbsp. cornstarch
3 tbsp. dry white wine, optional
2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. allspice
6 flour tortillas
Using large pot, simmer apples, figs, sugars, cornstarch, wine
and spicesover medium heat.
If you want to use only the cinnamon, this will be fine too.
Add some water, 1/4 c. at a time if and as needed, until apples
cook to achieve jam-like consistency.
Simmer 20 minutes, stirring occasionally.
Let cool.
Spread cooked apple/fig mixture in center of each tortilla.
Roll and serve.
Makes 6 servings.
