    Dutchie Strawberry Tarts

    2 tbsp. unsalted butter
    3 eggs
    1/2 c. flour
    1/2 c. milk
    2 tbsp. vegetable oil
    1/4 tsp. vanilla extract
    1/4 c. orange or apricot marmalade
    4 c. fresh strawberries, sliced
    1 tsp. fresh lemon juice
    1/4 c. confectioners sugar, sifted
    2 c. whipped cream

    Place 1 tsp. butter into each of six mini tart pans. Place pans into a cold oven, turn oven on to 400.
    Combine eggs, flour, milk, oil, and vanilla in a mixer bowl and beat until smooth.
    Remove pans from oven and divide batter evenly between pans.
    Bake for 15 - 20 minutes, until golden and puffy.
    Melt marmalade in a saucepan, over a low heat. Stir in lemon juice and strawberries, stir until well coated.
    Spoon fruit over the center of the baked tarts and put on individual dessert plates. Garnish with confectioner's sugar and a dollop of whipped cream serve at once.
    Makes 6 servings.
