Key Lime Dessert Squares
for the crust:
1/2 cup crushed graham crackers, or crumbs
1/2 cup crushed vanilla cookies, or crumbs
1/4 cup ground nuts, (your choice)
1/4 cup butter, or margarine
vegetable cooking spray
2 tablespoons flour
for the filling:
1, 8 ounce package softened cream cheese
1/2 cup granulated white sugar
1 large egg
1/2 cup freshly squeezed lime juice
2 teaspoons grated lime zest
Coat the bottom and sides of an 8x8x2 inch baking dish with
cooking spray. Then sprinkle with flour and shake to coat;
shake any excess away.
for the crust:
Stir together the crumbs and nuts in a medium bowl.
Blend in the butter until the mixture is crumbly.
Press the mixture firmly on the bottom of the baking dish.
Refrigerate or freeze for about 1/2 hour to chill.
for the filling:
Preheat oven to 350 degrees F.
Beat together the cream cheese, sugar, egg and juice until
the mixture is smooth and creamy.
Add zest and beat again.
Spread evenly onto the chilled crust.
Bake for 20 - 25 minutes or until set.
Remove from the oven and let cool on a wire rack.
Refrigerate before serving.
Makes 9 servings.
Note:
May be served with 1/2 of a green or red Maraschino
cherry, or fresh strawberry, or a thin slice of lime.
