This ice cream dessert can be prepared and frozen weeks
in advance. I've found it has more mass appeal than
traditional pumpkin pie.
Pumpkin Dessert, frozen
1, 15 ounce can solid pack pumpkin
3/4 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon ground cloves
2 quarts softened vanilla ice cream
1 cup finely chopped walnuts, optional
Lightly butter a 13x9x2 inch baking dish.
Use a large mixing bowl to combine the pumpkin,
sugar, vanilla, salt, cinnamon, ginger, and cloves.
Fold in the ice cream.
Place into baking dish and sprinkle with walnuts.
Cover and freeze overnight.
Remove from the freezer 10 minutes before serving.
Cut into squares.
Makes 16 - 20 servings.
