Cake - Applesauce Cake Squares

List of Ingredients
1/2 c. softened butter
2 eggs
2/3 c. apple juice concentrate
1/2 c. applesauce
2 c. flour
2 tsp. baking powder
2 tsp. ground cinnamon
1/2 tsp. baking soda
1/4 tsp. salt
1 large chopped apple
for the creamy topping:
1/2 c. heavy cream
1 tsp. vanilla
1/4 tsp. ground cinnamon
Recipe
Preheat oven to 375. Lightly grease an 8x8x2" square baking pan.
Combine flour, baking powder, cinnamon, baking soda, and salt. Set aside.
Beat butter in large bowl until creamy.
Blend in eggs, juice concentrate, and applesauce.
Gradually add dry ingredients to egg mixture, beating until well blended.
Stir in chopped apples.
Spread batter evenly into baking pan. Bake for 20 - 25 minutes, or until tester comes out clean.
Let cool and cut into squares.
Serve warm or at room temperature with the creamy topping, if desired.
for the creamy topping:
Beat cream in a small bowl until soft peaks form.
Beat in vanilla and cinnamon until stiff peaks form.
Makes 9 servings.
