Dessert - Baked Apple Rice Pudding

List of Ingredients
1/3 c. egg substitute
2 c. finely chopped apples, (2 medium)
1 1/2 c. cooked white rice
1/2 c. raisins or pitted chopped dates
1/4 c. sugar subsitute (Splenda)
1/2 tsp. + 1/4 tsp. ground cinnamon
2 tbsp. I can't believe it's not butter light
1 tsp. vanilla
2 egg whites
Recipe
Preheat oven to 325. You need a 1 1/2 quart casserole dish.
Mix egg substitute, apples, rice, raisins, sugar substitute, the 1/2 tsp. cinnamon, butter light and vanilla together; and set aside.
Beat the egg whites until stiff peaks form. Then fold very carefully into the rice mixture. Turn carefully, into the casserole dish.
Sprinkle the 1/4 tsp. cinnamon on top.
Place casserole in a pan, pour 1" of very hot water around the dish and bake about 70 minutes.
Serve warm or chilled.
If desired, garnish with fresh apple slices dipped in lemon juice.
