Fish - Baked Flounder Packets

List of Ingredients
6, 12 inch squares parchment paper*
1 - 1 1/2 pounds flounder, (6 pieces)
...make use other lean white fish fillets
salt and pepper to taste
1 cup shredded carrots
1 cup sliced mushrooms
1/4 cup finely chopped onion
2 minced garlic cloves
1/2 teaspoon dried tarragon
2 teaspoons I Can't Believe It's Not Butter Light
1/2 cup dry white wine or unsweetened apple juice
1 tablespoon dried parsley or 1/4 cup finely chopped fresh
6 lemon wedges
Recipe
Place a fillet on each piece of parchment paper.
Sprinkle lightly with salt and pepper.
Using a large frying pan, saute the carrots, mushrooms,
onions, garlic, and tarragon in the butter light for about
5 minutes, until the carrots are crisp tender.
Stir in the wine and parsley.
Season to taste with salt and pepper.
Spoon this mixture equally over fish fillets.
Preheat oven to 425 degrees.
Fold the paper in half, bringing the edges together.
Crimp the edges tightly to seal.
Place the packets on a jelly roll pan.
Bake for 10 - 12 minutes, until the packets puff.
Serve with lemon wedges.
Makes 6 servings.
*Note:
Aluminum foil may be used instead of the parchment paper.
You will need to bake the packets for 15 minutes.
