    BreadMuffin - Banana Bread

    List of Ingredients

    1 c. Splenda sugar substitute
    1/3 c. I can't believe its not butter light
    1 egg
    2 egg whites
    1 tsp. baking soda
    2 c. flour
    4 tbsp. milk
    3/4 tsp. vinegar
    3 ripe, mashed bananas

    Recipe

    Preheat oven to 350. Grease a 9x5" loaf pan.
    Blend sugar substitute and butter light together.
    Add the eggs and mix well.
    Sift flour and baking soda together into the bowl and stir.
    Mix milk and vinegar together, then add to mixture.
    Fold in bananas.
    Bake for 1 hour or until tester comes out clean.
    Let cool and cut.
    Makes 20 servings. (20 slices.)
