Dessert - Belgian Waffle Dessert

List of Ingredients
2 1/4 c. cold 2% low fat milk
1 3oz. pkg. sugar free instant vanilla JELL-O pudding mix
2 tbsp. lemon juice
1 tsp. grated lemon peel
1 c. light frozen whipped topping, thawed ping
10 small Frozen Belgian or regular waffles, toasted
2 c. sliced strawberries
1 c. raspberries
1 c. blueberries or blackberries
Recipe
Combine the fruits all together. Set aside.
Pour milk into large mixing bowl.
Add pudding mix, lemon juice and peel. Beat with a wire whisk until well blended, 1 to 2 minutes.
Gently stir in whipped topping.
For each dessert, spoon about 3 tbsp. pudding mixture onto each dessert plate. Top with waffle, and additional 2 tbsp. pudding mixture and a scant 1/2 c. of the fruit mixture.
Repeat with remaining ingredients, as needed.
Store any leftover pudding mixture and fruit in refrigerator.

Note the berries also add 2 grams of fiber per serving.
