    BreadMuffin - Berry Muffins

    List of Ingredients

    2 c. biscuit mix
    1 c. plain nonfat yogurt
    1/4 c. + 2 tbsp. Splenda sugar substitute
    1 large egg
    1 c. berries - blueberries, cherries, blackberries, strawberries, etc
    2 tsp. grated lemon peel

    Recipe

    Preheat oven to 425. Grease a regular sized 12 muffin tin.
    Combine biscuit mix and the 1/4 c. of sweetener in a bowl.
    Add yogurt and egg and beat with a fork until well combined.
    Gently fold berries into batter.
    Pour about 1/4 c. of batter into each muffin cup.
    Combine lemon peel and the 2 tbsp. of sweetener and mix well.
    Sprinkle over batter and bake for 20 - 25 minutes or until golden brown.
    Serve hot or cool.
    Makes 12 muffins.

    104 calories per muffin.
    Diabetic exchange: 1 Bread, 1/2 Fat

    *Lower fat by using a low fat biscuit mix, and an egg substitute in place of the whole egg.
