    DressingSalad - California Walnut, Turkey + Rice Salad

    List of Ingredients

    California Walnut, Turkey + Rice Salad

    3 c. cooked brown rice
    2 c. cooked, diced white turkey meat
    1/2 c. diagonally sliced celery
    1/4 c. pineapple chunks, drained
    1/4 c. mandarin oranges, drained
    1/4 c. thinly sliced water chestnuts, drained
    1/4 c. scallions, thinly sliced
    1/4 c. chopped walnuts
    1/2 c. low fat lemon yogurt
    1/2 c. low fat mayonnaise
    1 tsp. grated lemon rind
    1/2 tsp. curry powder
    6 c. lettuce, (iceberg,Romaine, spinach, Boston or Mache - your choice)

    Recipe

    Combine the rice, turkey, celery, pineapple, oranges, chestnets, scallions and walnuts together in a large bowl. Whisk together the yogurt, mayonnaise, rind and curry.

    Add the yogurt mixture to the rice mixture and toss to coat. Cover and refrigerate until ready to serve.

    Serve 1 c. of the salad over 1 c. of the lettuce leaves.

    Makes 6 servings.
