    Cake - Carrot Cake

    List of Ingredients

    1/2 cups finely grated carrot
    1/4 cup chopped dates
    1 cup raisins
    1 1/3 cups water
    1/4 cup unsweetened applesauce
    1 teaspoon ground cinnamon
    1 teaspoon ground cloves
    1 teaspoon grouond nutmeg
    2 cups whole wheat flour
    1 level teaspoon baking powder
    1 level teaspoon baking soda
    1/2 cup chopped nuts, optional

    Recipe

    Preheat oven to 350. Use non stick cooking spray on an 8x8x2" pan.
    Place the carrots, dates, raisins, water, applesauce, cinnamon, cloves and nutmeg in a saucepan and bring to a boil.
    Reduce heat, and simmer for 5 minutes. Let cool.
    Stir the dry ingredients together.
    Combine the cooled wet mixture and the dry mixture and stir until well blended.
    Spoon the batter into the cake pan and bake for 45 - 50 minutes.
    Makes 1 cake or 12 servings.
