    Dessert - Cranberry Bread Pudding

    List of Ingredients

    1 3/4 c. low fat milk
    1/2 tsp. salt
    1/2 tsp. vanilla
    2 c. soft stale bread cubes
    1/4 c. honey
    2 beaten eggs, or substitute to equal
    1 c. cranberries
    light whipped cream or light cream

    Recipe

    Preheat the oven to 350. Grease a shallow 1 1/2 quart baking dish.
    Combine the milk, salt, vanilla, bread cubes, honey, eggs and cranberries together.
    Pour into the baking dish.
    Bake for 25 minutes, or until firm.
    Serve warm with a dollop of whipped cream or with the light cream.
    Makes 6 servings.

    Food exchange per serving: 1/2 low fat milk, 1 starch/bread, 1/2 fruit, the honey would be 1/16th of cup per serving
