    BreadMuffin - Cranberry Orange Oat Bread

    List of Ingredients

    1 c. uncooked oats, (regular or quick)
    2 c. flour
    1/4 c. sugar substitute
    1 tsp. baking powder
    1/2 tsp. baking soda
    1/4 tsp. salt, optional
    3/4 c. fat free milk
    3 whole eggs or 3/4 c. egg substitute
    1/3 c. orange juice
    1/4 c. vegetable oil
    1 tbsp. grated orange peel
    1/2 c. chopped cranberries, fresh or thawed frozen
    1/4 c. chopped nuts, optional

    Recipe

    Preheat oven to 350. Grease and flour a 9x5" loaf pan.
    Use a large bowl to stir together the oats, flour, sugar substitute, baking
    powder, baking soda and salt. Set aside.
    Use a medium bowl to mix the milk, eggs, orange juice, oil and orange peel.
    Mix thoroughly.
    Add the wet ingredients to the dry ingredients all at once, stirring until
    just moistened.
    (Do not over mix.)
    Stir in the cranberries and nuts.
    Pour into loaf pan and bake for 60 - 70 minutes or until a tester comes out
    clean.
    Let cool in the pan, on a wire rack for 10 minutes; then remove from the pan
    and let cool completely.
    Makes 1 loaf or 16 servings. Store tightly wrapped.
