CreamCheese - Cucumber Cups with Horseradish

List of Ingredients
2 ounces room temperature, low fat cream cheese
2 tbsp. light or fat free mayonnaise
1 tbsp. drained prepared horseradish, not the creamy type
1 large peeled cucumber, (about 12 ounces), (seedless if you can get it)
18 small fresh parsley or dill
Recipe
Combine the cream cheese, mayonnaise, and horseradish together.
Chill for at least 30 minutes.
Scrape, (score), the cucumber lengthwise with the tines of a fork.
Cut the cucumber round ways, (crosswise), into 18 half inch slices.
Using a melon baller or a 1/2 tsp. measuring spoon, scoop out a small hollow on the flat straight side.
Do not cut all the way through.
Transfer the cream cheese mixture to a zip lock type bag and pipe the cheese mixture into the cucumber cups.
Garnish the tops of the cups with parsley or dill sprigs.
Makes 18 cup appetizers or 9 servings.
