Fish - Ginger Shrimp
1-1/2 pound frozen peeled, cooked jumbo shrimp
1 teaspoon corn oil
2 green onions, minced
2 teaspoons minced ginger root
2 cloves garlic, minced
3/4 cup low-sodium, low-fat chicken broth
3 tablespoons lite soy sauce
2 tablespoons apple cider vinegar
2 teaspoons rice vinegar
1/4 teaspoon chili powder
1 tablespoon cornstarch or arrowroot
2 tablespoons water
3 cups cooked brown rice
In a large skillet, over medium-high heat, heat the oil. Add
the green onions, ginger, and garlic. Stir-fry for 30 seconds.
Add the broth, soy sauce, cider vinegar, rice vinegar, and
chili powder. Bring to a boil. Lower the heat. Add the
shrimp and cook for 3-4 minutes, turning shrimp once.
Mix the cornstarch or arrowroot with the water. Add to the
skillet and cook until thickened. Serve the shrimp over the rice.
Makes 6 servings of 3 - 4 ouncaes of shrimp wiht 1/2 cup rice.
