for steaks:
2 teaspoons olive oil
1 teaspoon minced garlic
1 teaspoon lemon juice
1/2 teaspoon dried basil leaves
1/2 teaspoon dried thyme leaves
4 tuna steaks (about 4 ounces each)
Salt and pepper, to taste
for sweet+sour tomato/basil relish:
2 tablespoons tomato paste
1-1/2 tablespoons red wine vinegar
1/2 tablespoon water
1/2 tablespoons sugar
1 tablespoon olive oil
1/4 teaspoon dried basil leaves
1/4 teaspoon dried thyme leaves
Olive oil cooking spray
1 large tomato, seeded, cubed
for steaks:
Combine olive oil, garlic, lemon juice, and herbs in small bowl.
Broil fish 5 inches from heat source 10 minutes; turn.
Brush with oil mixture; sprinkle lightly with salt and
pepper. Broil until fish is tender and flakes with a fork,
6 to 10 minutes. Serve with sweet+sour relish.
Yield: 4 servings
for sweet+sour relish:
Whisk tomato paste, vinegar, and water in small bowl until
smooth. Whisk in sugar, olive oil, and herbs. Reserve.
Just before fish is cooked, spray small skillet with cooking
spray; heat pan over medium/high heat. Add tomato and stir
briefly until seared. Stir into reserved tomato paste mixture.
Makes about 1 cup
